Holt’s Momma’s Divinity

1 c. Karo syrup, Red label
3 c. granulated sugar
1/2 c. water
1/4 tsp. salt
2 egg whites
1 tsp. vanilla
3/4 c. chopped pecans

Combine Karo syrup, sugar, water and salt. Boil to 265 degrees F. (hard ball
stage). Beat egg whites until stiff. Add vanilla and gradually beat in the
boiling syrup. Whip until it begins to stiff (stiff peak stage). Remove from
mixer and quickly mix in pecans. Quickly drop by teaspoonfuls onto wax
paper. Cool.
Tips: Divinity turns out better when the humidity is low. Lightly spray
spoons with PAM so that the divinity does not stick to the spoons. Divinity
can be frozen in airtight containers for up to 6 months.
